cracker toffee.


i got a tip from this friend to make some cracker toffee for a recent girls night out party. when i first read through the ingredients, it didn't sound too appetizing. crackers? in toffee? didn't sound that great. what sold me was that it was candy, that took minimal effort (no candy thermometer!) and i happened to have all the ingredients on hand. the result? perfection. delicious on so many levels. you could do so many things with this recipe. i ended up throwing some coconut on half, but the topping options are endless. you could also turn this into a vegan recipe with a few swaps. the batch lasted approximately 18 hours. probably less. you can't help going back for...just one more piece.

cracker toffee
adapted from the delicious blog, everybody likes sandwiches
ingredients
enough crackers to line a baking sheet (i used stoned wheat thins)
1 cup unsalted butter, cut into chunks
1 cup packed light brown sugar
big pinch of kosher salt (optional...i opted out, since the crackers already had salt on them)
1/2 tsp vanilla extract
1 cup milk chocolate chips (or dark, semisweet, etc)
1 cup toasted coarsely chopped almonds
1 cup coconut

directions
line baking sheet with foil, making sure you have enough to make a rim around the pan. line the pan with crackers, breaking them up if needed to fill in gaps. preheat the oven to 375 degrees.

in a medium sized saucepan, melt the butter and sugar together, over medium heat. stir frequently until the mixture begins to boil. boil for 3 minutes, stirring constantly. remove from heat, stir in vanilla. if you are using unsalted crackers, add in salt. pour caramel over crackers and spread evenly with a silicone spatula.

put the baking sheet in the oven, reducing heat to 350 degrees. bake for 15 minutes, watching carefully that the caramel does not burn.

remove from heat and cover with chocolate chips. let stand for 5 minutes or so until chocolate begins to melt and spread evenly with a spatula. sprinkle with toasted almonds, coconut or any toppings of your choice. let cool completely, then break into pieces and store in an airtight container.
