thunder and waffles

mother nature is a fickle woman. we've been switching off sunny days here in texas with windy, rainy ones. last night, we experienced one of the cooler thunder storms i've ever heard. the thunder seemed to go on for minutes at a time, and the rain came down in fat drops. it was the perfect night for cuddling up to a little american idol and a little breakfast for dinner. comfort food for cold weather always seems to fit the bill. a fun, healthy twist on a traditional recipe - adapted from this blog


whole wheat waffles (with berries and warm maple syrup)

1/4 cup oil
1/2 cup applesauce
2 eggs
1 1/2 cups milk
1/2 tsp vanilla
2 cups whole wheat flour
1/4 cup ground flaxseed
1/3 cup old fashioned oats
2 tbs sugar
4 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon

mix oil, applesauce, eggs, vanilla and milk. add dry ingredients and mix until everything is incorporated. batter will be thick!

pour into a preheated and greased waffle iron, and cook until golden brown. serve with berries and warm syrup.

ummm, yummy... Those remind me of my grandma. She use to make us whole wheat waffles every time we slept over. They were so delish!
