a recipe for your weekend.

it's amazing how many ways i'm finding around my "no sugar for 21 days" challenge. to clarify, i didn't add the chocolate chips. and brown rice syrup doesn't count.

chocolate peanut butter chews.
ingredients
1 cup crisp rice cereal (i use GF's Nature's Path)
1/4 cup smooth all-natural peanut butter (we buy the organic costco brand)
3 tbsp organic brown rice syrup
1/2 tsp pure vanilla extract
1 tsp cocoa powder
2 tbsp dark chocolate chips

directions
line a plate with parchment paper. in a medium sized bowl, stir the peanut butter, brown rice syrup, chocolate chips and vanilla extract. microwave on high for 30-45 seconds. stir well and immediately mix in the cocoa powder. stir until incorporated. immediately stir in the rice crisp cereal until completely coated.

roll mixture into balls, and place on parchment paper. freeze for 5 minutes. let stand at room temperature for 5-10 minutes before stuffing all of them in your mouth. makes about 7 balls.

Yummy. I've been wanting to try these, just need to buy some brown rice syrup. Thanks for giving them the test run.

P.S. Your little man is too cute! It's crazy how fast they grow up!
